A temperature drop below minus 8 degrees sparks a flurry of activity at the Niagara College Teaching Winery each winter. When that day arrives, students from the college’s wine programs bundle up and set out into the on-campus vineyards to pluck grapes that will be transformed into one of Niagara’s most treasured products – Icewine. On January 8, 2014, a new batch of students from the College’s Winery and Viticulture Technician, and Wine Business Management programs had an opportunity to participate in the Teaching Winery’s Icewine harvest; an annual rite of passage at Niagara College, but unlike any other college experience in the world. The Niagara College Teaching Winery, located at the College’s Canadian Food and Wine Institute at its Niagara-on-the-Lake Campus, is the first and only commercial teaching winery in Canada.
